Gyros and Roasted Cauliflower

I love Gyros and so does Joey.  Only thing is, you really dont know how much fat and calories are in the meat and how healthy the other ingredients are.  So I took matters into my own hands and got creative and pleased both our palates in the process~Here you go:

GYRO:

Whole wheat/high fiber pita pockets, cut and opened

Roast beef lunch meat (lean and I used Nitrate free)-microwave to heat up

Chopped Tomato, Lettuce, and Sauteed Onion

Tzatzaki Sauce on top, (Its a yogurt/cucumber/dill sauce) Sprouts makes a really good one

ROASTED CAULIFLOWER (Got this one from mom-thanks!)

Preheat oven to 375 deg

2 heads of cauliflower chopped into pieces and put into large bowl

Drizzle with as much olive oil as you like

Sprinkle with pepper

Sprinkle and toss shredded Parmesean cheese (fresh).  I used Asiago cheese this time, it was even better. 

Toss in a bowl, let sit in fridge for 15 minutes so oil soaks in.  Line baking sheet with foil, put cauliflower on sheet.  If desired, sprinkle more cheese.  Bake 20 minutes 🙂  A really easy way to get your cruiciferous veggies in!  I hope you enjoy!
